Terre Ducru - Matured Olives PDO (Provence)
Olive oil made with matured olives, also known as “black fruity”, is a speciality of Provence and part of the Baux-de-Provence PDO. It is an oil extracted from olives fermented in a controlled environment to obtain characteristic aromas of tapenade and cocoa, and a very smooth oil.

Details
Sensoriality: dominant notes of ripe olive, cocoa and dried fruit. Discrete pepperiness.
Pairing suggestions: always use raw on salads, fish, mushrooms or mashed potatoes. Also great for mayonnaise.
Cultivar: Salonenque, Aglandau, Verdale, Picholine, Grossane - Harvest: October 2023 (best before February 2025) - Polyphenols: 250-350 mg/kg
