Black Tonda Iblea Olives in EVOO Marinade

In addition to extra virgin olive oil, Tenuta Chiaramonte also produces preserved olives. The particularity of these lies in the process: the olives are left to marinate in brine for about 8 months according to the traditional method, and no soda is used to accelerate the process.
Once the olives have undergone the brining process, they are ready to be accommodated in two versions: brine (water and salt), or seasoned i.e. with the addition of spices, chilli pepper and the Tenuta Chiaramonte extra virgin olive oil.
