Avocado Ice Cream

A surprising, refreshing and easily-prepared dessert variation of Mexican guacamole.

Ingredients (4 servings):

  • 3 ripe avocados

  • Juice of 1 lime

  • 2 tablespoons of maple syrup

  • Dehesa de la Sabina organic extra virgin olive oil

  • A few fresh mint leaves and pistachio crumbs (optional)

Steps:

  • The day before, empty the avocados and reserve the flesh in a box in the freezer

  • Install your blender

  • Add the lime juice, maple syrup and avocado flesh to the mixing bowl and blend until creamy

  • Serve immediately in individual portions, dress the ice cream with a drizzle of olive oil, and decorate with fresh mint leaves and pistachio crumbs if you like!
