Acquasale Salad

The Acquasale is the typical tomato salad served in Puglia, a region located at the Southern tip of Italy. Fresh but hearty, this salad is ideal as a main course on a hot day.

Ingredients (4 servings):

  • 250g of stale bread - traditionally the friselle bread from Puglia is used but it can easily be replaced by another dry bread, and even gluten-free bread or crackers for a gluten-free version

  • 400g cucumbers, peeled, seeded and diced

  • 400g cherry tomatoes cut in half

  • 150g finely chopped red onion

  • Organic extra virgin olive oil Le 4 Contrade

  • Fresh or dry oregano

  • Salt and pepper

Steps:

  1. In a salad bowl, place the dry bread in crumbs

  2. If the bread is very hard, wet it with a glass of cold water

  3. On top, add the cucumbers, tomatoes and onion and sprinkle with salt, pepper and oregano

  4. Let them rest on the bread for five minutes

  5. Mix the ingredients well and finish with generous drizzles of Le 4 Contrade organic olive oil

  6. Serve immediately
