Linguine Pasta in Marinara Sauce

As intense as it is lazy: the perfect tomato sauce for every day!

Prep time: 2 minutes

Cooking time: 45 minutes

Ingredients for 400 g of pasta (4 people):

  • 1 jar of passata (425 g)

  • 1 onion

  • 1 garlic clove

  • 1 soup spoon of aromatic herbs, preferably dried. Together or separately: thyme, rosemary , oregano, a bay leaf

  • Filtered extra virgin olive oil for cooking

  • Optional: 1 coffee spoon of Balsamic Vinegar of Modena IGP, sweet and dense (not too acidic)

  • Salt, pepper

Preparation :

  1. Peel the garlic and onion, cut them in two, remove the germ from the garlic, keep aside 

  2. Pour a soup spoon of olive oil in a deep pan on a low heat  

  3. Add the halved onion and garlic, your chosen aromatic herbs, and let it sizzle lightly for 1 minute 

  4. Add the passata, rinse the jar with a little water you will then add to the pan

  5. Cover with an anti-splatter shield guard and let the sauce simmer on a low heat for about 45 minutes on the lowest heat. No need to stir, you are now free to go about.

  6. After the 45 minutes are passed, you can remove the onions and smash the garlic cloves inside the sauce if you wish

  7. You can now season to taste with salt, pepper, and a dash of Balsamic Vinegar of Modena IGP (optional)

Mix with pasta, a dash of olive oil: your meal is served!
