This is grassy, pronounced bitterness, fresh, and some pepperiness at the end. Good with something strong like a lentil stew or spicy baked vegetables, baked spiced tempeh, and of course sourdough bread, but have some balsamic vinegar with it to balance the bitterness. It's a solid 4-star.
