The Cassini family has been growing Taggiasca olive trees for generations. In their valleys of Liguria in the northern Italy, all families used to have an olive grove for their own consumption. This was the norm.
Paolo’s grandfather Jean and his father Giannino set up the first family mill in 1962, using the traditional milestones. This was subsequently replaced by avant garde extraction equipment in order to obtain the highest quality green fruitiness olive oils. An approach that is almost unique in Liguria, where olives are traditionally harvested at a very mature stage.
With only 2500 olive trees, Paolo’s farm is remaining intentionally small to focus on quality rather than quantity.
